i love eating. i love cooking -- especially if i have someone to cook for. but now that i live alone and often have no one to feed but myself, and i have lost much of my inspiration to cook. lately, i haven't felt like cooking, i haven't felt like cleaning up, and maybe, just maybe, i haven't even felt like eating (GASP!). it sounds really depressing, but all it is is laziness.
but today i decided it was time to get out of this slump with one of my favorite thai dishes, pineapple fried rice.

It wasn't that big. And I had to tell them what to put on it that the advertising said was supposed to be on it, like cheese, and chipotle sauce. At least they knew it had steak in it, but I don't think I got as much as it should have been, for $6. I only got this because it was supposed to be a "new" "special" menu item and I wanted to try it, but they just used what they always already had. This is the last disappointment. If I ever eat another Subway sandwich, please go Three Stooges on my face.

My husband gave me a pasta machine (the hand crank variety), and I would like to start making pasta. However, while the rest of us are ovo-lacto vegetarian, my eldest daughter's diet is leaning more and more toward vegan these days. The recipes provided with the machine all call for eggs, so I am searching for some good egg-free options.

I want a milk alternative to use in my coffee, hot chocolate and other hot drinks that doesn't separate. Sometimes the milk will either create a film at the top and/or bottom or it will separate and there will be pieces floating around in my drink. I think I have only used soy-based milks in my coffee, I even tried using the Silk Soy Creamer but that still did it and it left a bad aftertaste. I think I've also tried hemp milk and that didn't work either.
On that note, if anyone has any vegan coffee and/or tea recipes, I would love to hear them! I am a coffee freak ;)

I'm looking through recipes for making seitan and I see that many recipes mix the vital wheat gluten with whole wheat flour to make the dough--and other recipes call for just the vital wheat gluten. Does anyone have experience with either types of recipes? What are the differences?

I've been sporadic with my bento-making, but I will try to make it a habit. It makes me happy knowing that I have a yummy, neatly-packed lunch to come home to. :)
Top tier: leftover crockpot beef roast/gravy, white rice with Tony Chachere's creole seasoning on top
Bottom tier: broccoli & cauliflower, Colby Jack cheese cubes with the cute kitty pick. I'm rereading the Harry Potter series right now and the pick reminded me of Crookshanks. :)
On the side: Wheat Thins & sugar free grape Kool-Aid (not shown), gummi worms
